Ingredients

11/2 inch long Cinnamon stick(chekka in telugu)

10 Cloves(lavangam in telugu)

8 Elaichi/Cardamom

11/2 tsp Dhaniya

1 tsp Jeera

11/2 tsp KhusKhus(gasagasalu in telugu)

pepper (optional)….if you want the masala to be more spicy)

Method

In a frying pan fry all the above said ingredients till there is a fantastic aroma  and the coriander seeds change the colour….keep stirring……let them cool to the room temperature….

In a blender,blend all the above fried ingredients together till very smooth powder and store in an air-tight container….. use as required in cooking …..will be fresh for 6months

Note:above said measurements are for a single time use of the powder…..if you want to prepare the powder in large amounts take 5times/10times  the above said measurement…..

Sesame-Powder

Nuvpappu-Podi

Ingredients

1 cup white Sesame Seeds(nuvvulu)

1tsp jeera

4 red chillies

salt as required

Method

  • Fry sesame seeds ina frying pan without oil till they turn light brown …….keep aside and let them cool…make sure not to burn them
  • In the same pan fry jeera,red chilli…and let them cool
  • In a blender, blend all the fried ingredients(jeera,sesame seeds,redchilli,salt)adding sufficient salt to a fine powder and serve hot along with hot rice,ghee…..also can be served with idli,dosa……
  • Store in an air-tight container and this stays fresh for a month……

karivepaku podi

Ingredients

Curry leaves 1 bigbowl (clean them in running water and dry them on a paper towel or napkin)

1small cup white sesame seeds(nuvvulu)

1small cup ground nuts

salt as required

1 tsp jeera

4-5 red chilli(depends on your taste)

pinch of turmeric(optional)

Method

  • In a frying pan add the curry leaves and fry till they turn brown and crispy…..once it is done keep them away from flame and let them cool
  • In the same pan fry jeera,redchilli and keep aside…….now fry groundnuts till they splutter and keep aside……..fry sesame till they turn light brown and keep aside….make sure not to burn them
  • In a wedge blend all the above fried ingredients (jeera,redchilli,sesame,groundnuts,curryleaves,salt,pinch of turmeric) together ……….and serve along with hot rice and ghee………also goes great  along with idli,dosa….
  • store the powder in an air-tight container and it stays fresh for a month…
