Ingredients:

small onion chopped

small cup chopped broccoli

small cup celery

6tsp melted butter

milk 1cup

water as required

salt to taste

all-purpose flour 2tsp

chicken/vegetable broth 2 tsp

pepper 1tsp

Method:

Melt 2 tablespoons butter in medium sized dish, and saute onion until tender….now, add celery and cook until soft. Add broccoli and cook closed for 2mts…now,add chicken broth and water and boil it for 10 minutes.

Pour the soup into a blender. Puree in batches until smooth and pour into a clean pot.

In a small saucepan, over medium-heat melt 3 tablespoons butter, stir in flour and add milk. Stir until thick and bubbly, and add the broccoli soup.Check the salt,Season with pepper and serve. 🙂

Corn Soup

Ingredients
1cup corn frozen
3 cups water
1 carrot finely chopped
1tsp rice vinegar
2tsp vegetable broth
1tsp soya sauce
1tsp olive oil
2tsp cornflour

salt to taste
Method
Soak the frozen corn in hot water for 2-3 mts….now,keep away 1/4th cup corn for the later on use and grind the remaining corn into fine paste…..now take 2 tsp vegetable broth in a cooking vessel and add 3cups water….cook on medium flame for 2-3mts….add vinegar,soya sauce and the corn paste…..after 2 mts add finely chopped carrots,and corn…..add olive oil and bring to boil….remove any excess froth….add salt…once the carrots are soft finally,add cornflour paste to thicken the soup….corn soup is ready to serve 🙂

Ingredients

Boneless Chicken 150gms

onion finely chopped lengthwise 1 no

small carrot finely chopped

green chillies 2-3no

salt to taste

butter 2-3 tsp

soya sauce 1tsp(optional)

rice vinegar 1tsp(optional)

egg white 1no

ginger-garlic paste

11/2 tsp pepper pwd 2tsp

chilli pwd 1tsp

turmeric pinch of

water as needed

Method

Clean the chicken….now add chilli pwd,turmeric,ginger-garlic paste,1tsp pepper pwd ….mix well….now,pressure cook for 5-6 whistles adding some water….once,it is cooked finely chop the chicken and don’t throw away the boiled chicken water….now,in a cooking pan add butter and let it melt….now add finely chopped onions and let it turn light brown….add green chillies, and carrot….cook covered for a minute….now add finely chopped chicken pieces….once the carrot is cooked add boiled chicken water,and an additional 2 cups water and bring to boil….add pepper pwd,soya and vinegar….let it boil for 2-3 mts….simmer and then add egg white and mix well….finally add chopped coriander and serve….:)
