Ingredients

Sliced bread – 1 loaf

Butter – 100 gms

Mint chutney Р3 tbsp

Cucumber – 1

Carrots – 2

Tomatoes – 2

Onions – 2

boiled aloo slices

green gram sprouts

Salt, Pepper powder – As required

Method

remove outer skin and slice the vegetables….apply butter on one side of bread slices….now,spread mint chutney on the buttered side of the slice…arrange sliced aloo,cucumber,tomato,carrot,onions,sprouts,sprinkle salt and pepper as required and cover with one more buttered bread slice….

now,apply some butter to a bread toaster and place the stuffed bread slices ….roast them till crispy…..repeat with other slices also….serve hot

those who dont have the bread toaster can do this on a dosa pan…just add some butter and place the stuffed bread slices over it and roast them on both the sides…..that’s it ur sandwich is ready to serve … ūüôā

Mint chutney

Ingredients

1/2 cup mint leaves

1/4 cup coriander leaves

1 green chilli

3 tsp lemon juice

5 tsp water (or 2 tsp water and 1 tsp curd)

salt to taste

clean all the greens and blend all the above ingredients till smooth…..pour into a bowl and serve…

UpmaRavva Idli’s are prepared using upma ravva,curd,grated coconut and steamed in idli moulds…these idli’s are most popular in Karnataka..served with coconut chutney,sambar,peanut chutney or sagu…..or you can just eat the idli too…..

serves: 2 people

no of idli’s- ¬†8

Ingredients

Upmaravva/semolina  1cup

1/2 cup curd

1/2 cup water

2-3tsp grated coconut

1 carrot grated

1/2 inch ginger finely chopped

1 green chilli finely chopped

salt to taste

pinch of cooking soda

tomato slices

cashews

ghee

coriander leaves

Method

In a cooking pan add 1tsp ghee and fry cashews till they turn brown and keep aside…..to the same pan add upmaravva and fry till it turns light brown and keep aside…..let it cool completely

In a mixing bowl add curd and beat properly without any curdles………then add water and once again beat properly…..then add salt,chopped ginger,chopped green chillies,grated carrot,grated coconut and mix properly….now,add upmaravva mix well and keep aside for 5mts….(the batter will not be in pouring consistency….it is some what thick so don worry)

Meanwhile grease the idli moulds with ghee and place 1 finely sliced tomato,couple of cashews,coriander leaves……as shown in the picture

Now,pour the ravva batter into the moulds as shown…..


Like a normal idle ….Steam the idli for 5-8mts in a idli cooker or normal cooker…after 5mts switch off the stove and place the cooker weight on the cooker and leave it for 5mts…….after 5mts open the cooker,remove the idli’s from the moulds and serve hot with any chutney,sambar,sagu or just the idle too…….

Preparation of idli in a cooker

Add some water in the cooker(can be 1 inch deep)…….as water spills on the bottom idli mould better leave the mould empty¬†then place the remaining idli moulds one by one in the cooker ¬†and cook with closed lid on high flame for a minute…..then you will find steam coming out of the cooker then,reduce the flame to sim and cook for 5-7mts and switch off the stove…….now place the cooker weight on the cooker and wait for 5mts…….after 5mts open the cooker,take the moulds out and remove the idli’s with a ¬†idli spoon and serve hot……

Semiya Upma

Ingredients

1 cup semiya/vermicelli

11/2 cup water

1 small onion finely chopped

1 green chilli finely chopped

1 carrot finely chopped

1 aloo cubed

mattar/green peas 2-3 tsp

1 small tomato

2-3 tsp oil

1tsp mustard seeds

1 tsp urad dal

curry leaves

salt to taste

Method

In a cooking pan add vermicelli and fry till it turns light brown….and keep aside…..to the same pan add oil and let it heat……once it is hot add mustard seeds and wait till they start to splutter then add urad dal and fry till it changes to light brown…then add curry leaves,onions,green chilli,some salt and cook till the onions turn light brown…….then add chopped tomato and cook till the tomatoes are soft….

Now,add mattar,carrot,aloo,some salt and cook for 5mts on sim flame with closed lid…keep stirring…..then add water and bring to a boil…….cook with closed lid till the vegies are soft…..

Now,add vermicelli and mix well….. check the salt and add more if you want…..cook with closed lid for 2mts….now,open the lid….. still, if there is any water remaining open the lid and cook till all the water evapourates……keep stirring or else it sticks……once it is done switch off the stove…..let it cool and serve……
