Egg Stew

Egg Pulusuis a very easy recipe cooked in tamarind juice…..goes with rice……if there are no vegies in your kitchen you can easily prepare this with eggs……..the taste of the egg cooked in tamarind juice is simply superbb…..hope you like the recipe  tooo…. 🙂

Ingredients

2 eggs

2 medium size onions

3-4 green chillies slit length wise

2 small tomatoes

1tsp mustard seeds

3 methi granules……dont add more methi or else the curry gives sour taste

2-3 red chillies

1/2 tsp ginger-garlic paste..(optional)

pinch of turmeric

1 tsp red chilli pwd

1 tsp sugar

3-4 tsp oil

1 big onion sized tamarind….in a bowl take 1 glass water and add tamarind to it….now boil the water on sim flame for a minute and switch off the stove…let it cool and extract the tamarind juice….keep aside

Method

boil the eggs……once it is done let them cool and remove the shell …..make  some slits on either sides of the egg with a knife or with the removed shell…..make sure not to cut the egg …..keep aside

In a cooking vessel add some oil and let it heat….now,fry the boiled eggs till they turn brown on all sides and keep them on a plate…..now to the same oil add mustard seeds,methi seeds,red chillies and fry for a minute…..now add chopped green chillies,onions and cook till the onions turn light brown…..add curry leaves and fry for a minute…….now,add chopped tomatoes and cook till tomatoes turn soft……

Now,add turmeric,red chilli powder and cook for a minute……add ginger-garlic ,fried eggs and cook for another minute……Now,add extracted tamarind juice and check the tanginess…….if it is more tangy add some water and some salt……or if you want the curry to be more tangy add some more tamarind juice……cook with closed lid for 10 to 15mts till the curry thickens and add coriander leaves…….before switching off the stove add 1 tsp sugar and switch off the stove…

goes great with hot rice…….

note: if you have dried prawns/dried fish you can add them to the curry just like egg……you need to fry them in oil ,remove once it is done and finally add  them with egg…..these are a very good combination for this curry…
