Janthikalu

Janthikulu  is a very popular snack of the South Indian cuisine. Janthikulu is traditionally combined with a mixture of urad dal powder, rice flour, salt, chilli powder, ajwain, sesame seeds.

Ingredients

Urad dal  roasted         – 1 cup

Rice flour                      – 4 cups

Butter                            – 1 tsp

red chilli pwd               – 1tsp

ajwain seeds                 -1 teaspn

sesame seeds               -1/2 cup

oil to deep fry

salt to taste

water as needed

Method

Grind the roasted urad dal into fine powder……now,in a bowl add all the above ingredients and mix thoroughly so that the butter is mixed well…..now,slowly add water and make a smooth dough…..take the Janthikalu press and add a ball sized dough in it……once the oil is hot start pressing the Janthikalu into the oil in a circular motion…..oil should be in medium-high heat……once the bubbles in the oil disappears and once you hear a crispy sound when you just move the laddle then,it indicates the Janthikalu are ready ……once they are cooled down they change the colour……crispy Janthikalu are ready to eat 🙂

Note:

  • don’t add more water when you kneed the dough,if so your Janthikalu will be more oily….
  • oil should be in medium-high heat or else they burn…..
