Perugu Garelu

Perugu Garelu,a popular snack in Andhra is prepared by soaking garelu in curd and then pouring the seasoning of mustard seeds,urad dal,curry leaf and redchillies over them.

Serves :4 People

2 Cups Urad Dal Washed and Soaked for 6 hrs before you cook,and then ground to a fine paste by adding very little water(just sprinkle water)
3 Cups Thick Curd
1 Cup Water
Milk :250 ml
2 Green Chillies finely chopped
Oil for deep frying
ginger 11/2 ” finely chopped
Coriander Leaves for garnishing
For Seasoning
1 tsp Urad Dal
1/2 tsp Jeera
1/2 tsp Mustard Seeds
2 Redchillies
Curry Leaves
Pinch Of Turmeric

  • Beat the Curd well till frothy(there shouldn’t be any lumps) and add water, and sufficient salt.
  • Fry all the seasoning items one by one in a spoon of oil and pour in the curd.If you have not got the lemon yellow colour in the curd you can add turmeric directly in the curd.keep this aside till the garelu are prepared.
  • Pre-Heat the oil in a deep frying vessel,apply little water to your hand and take lemon sized urad-dal batter into your hand and flatten it into the shape of vada( as i have shown in the picture, applying little water applying water to your hands and making the shape will be easier for you to drop it into the oil)and drop slowly into the hot oil(you can also use a thick plastic sheet to get the shape but you have to apply water to the plastic sheet only then the batter will leave the sheet).Deep fry on medium heat for sometime and then fry on high heat till golden brown.
  • Remove these deep fried garelu into a bowl of milk and place them in it for 15-20 seconds. Remove and gently press between your palms so that excess milk oozes out and drop them into the curd bowl.
  • Continue the same procedure with the remaining batter.
  • Garnish with coriander leaves.Chill the perugu garelu for sometime before you serve.
