Amaranth Leaves fry

Ingredients

Amaranth leaves 2 bunches(thotakura)

1 onion chopped

1 green chilli chopped

salt to taste

pinch of turmeric

oil as sufficient

1 tsp mustard seeds

1 tsp urad dal(minapappu)

2 red chillies

2-3 garlic pods

curry leaves

water

Procedure

  • Wash,drain and chop the amaranth(thotakura) leaves..bring them to boil in a vessel adding some water and salt.
  • In a cooking vessel pour 3-4 tsp oil and ¬†once it is hot add mustard seeds,urad dal,garlic pods,red chillies,onions,green chillies one by one and let them cook till the onions turn brown.
  • Now add boiled amaranth leaves and cook with lid closed for 5- 8 mts….add curry leaves,sufficient salt and switch off the stove….
  • serve with hot rice and ghee…..
