Masala Dosa

Ingredients
For Dosa
Urad Dal 1 cup
Rice 2- 2 1/2cups
Salt to taste
Oil as required
For Potato Curry
2-3 Boiled potatoes
1 onion finely chopped
2-3 green chillies
1 tsp mustard seeds
1 tsp urad dal
1 tsp chana dal
1/2 tsp jeera
1/2″ ginger
1 tsp turmeric powder
curry leaf
salt
oil as required
Potato Filling
Boil the potatoes and once they are cooled smash them and keep aside.
In a cooking vessel pour sufficient oil and let it heat.Once it is hot add mustard seeds and allow them to splutter,then add urad dal,chana dal,jeera,ginger,green chillies,onions one by one and allow them to fry for 2-3 mts till the onions become soft.
Add salt,and turmeric powder and mix well.
Now add boiled potatoes and mix well so that the salt is equally spread.Add 1-2 tsp of water to avoid the curry to stick to the vessel.
Now add curry leaves and switch off the stove.
Procedure
Soak rice and urad dal separately in water for 4-6 hrs.
Grind rice and urad dal into smooth paste adding water if needed.
Mix both rice and urad dal pastes to form dosa batter.
Leave the dosa batter overnight to ferment.
To the above fermented batter, add salt and water if required to obtain the consistency which is not too thick or thin.
Heat a dosa pan on high flame, spread a tsp of oil to cover the whole dosa pan.
When the pan gets smoking hot, pour a ladle full of dosa batter on it and spread with the bottom of ladle in spiral motion to form a circular and thin dosa.
When the bottom side of dosa gets golden brown, turn on other side for few more seconds.
Fill the dosa with potato filling and serve hot with any chutney.
