Grated Coconut Rice

Grated Coconut rice is a very easy recipe only thing you need to do is, to pre-cook the rice and add the seasoning to the rice and mix well.Usually prepared as a naivedyam/prasadam to God during festive time.

Ingredients
1/2 coconut grated
1 cup rice
1/4 cup chana dal
salt to taste
oil as required
Seasoning/Popu/tadka
1 tsp urad dal
1/2 tsp mustard seeds
2 red chillies
2 green chillies
curry leaves
Procedure

  • In a vessel add rice and chana dal together and wash properly and pressure cook it for 3 proper whistles.Once it is done transfer the rice to a plate and add 1 tsp oil,curry leaves and close the lid.
  • Now in a Seasoning bowl pour 2-3 tsp oil and once it is hot add urad dal,mustard seeds,greenchillies,redchillies and fry for 2mts and add grated coconut and fry continuosly for 1 mt or else the coconut will turn dark brown colour.
  • Now,add the seasoning to the rice along with sufficient salt and mix well so that salt is equally spread to each grain of rice and serve hot.
