Amaranth Leaves Stew

Ingredients

2 bunches of amaranth leaves(thotakura)

1 big onion finely chopped

1 small tomato finely chopped

2 green chillies slit length wise

pinch of turmeric

salt as required

1 tsp red chilli powder

1 small lemon sized tamarind juice

For seasoning

2-3 tsp oil

1tsp mustard seeds

1/2 tsp jeera

1 tsp urad dal

2-3 red chillies

curry leaves

4-5 garlic pods

Method

Clean the amaranth leaves and chop them ….In a bowl add amaranth leaves,finely chopped onion,green chillies,pinch of turmeric,red chilli pwd,some salt,tamarind juice,tomatoes and pressure cook them for 5-6 whistles….

Take the bowl out of the cooker smash all them into a smooth paste with a laddle  and cook on simmer flame  for 10mts……when the gravy thickens switch off the stove…..keep aside

In a vessel add 2-3 tsp oil and once it is hot….add mustard seeds…once they start to splutter add jeera,urad dal,red chilli,garlic pods,curry leaves…..and add this to the amaranth stew kept aside……check the salt and serve hot with rice…..
