Aloo Palak

Ingredients

2 bunches of palak

2 potatoes boiled and cubed(boil aloo in water adding some salt)

1 big onion

1 tomato pureed or finely chopped

4-5 garlic pods

1tsp ginger-garlic paste

pinch of turmeric

1tsp red chilli pwd

2 green chillies

1 tsp jeera

cinnamon stick 1/2 inch

2 cardamoms

2 cloves

3-4 tsp oil

salt to taste

Method

Remove stems, wash spinach thoroughly in running water….Blanch in salted boiling water for two minutes.Refresh in chilled water and squeeze out the excess water….Remove stems,wash and roughly chop green chillies….Grind spinach into a fine paste along with green chillies……Dice the boiled aloo into cubes…..Peel,wash and chop garlic……

Heat oil in a pan…….Add cardamom stick,cloves and cumin seeds…..when they begin to change colour,add chopped garlic and saute for half a minute.

Add the onions and let them turn light brown……Now,add ginger-garlic paste and let it fry for 1 minute……Now,add tomato puree or chopped tomatoes and let them cook till they become very soft….Add turmeric,red chilli powder and sufficient salt…..

Now,add palak paste and stir for 5mts…..after 5 mts,you will find oil oozing out of the gravy then add ¬†boiled aloo cubes to the gravy and cook for 5 mts….

serve hot with rice /roti
