Aloo-Beetroot Fry

Ingredients

2 medium sized aloo

1 medium sized beetroot

For seasoning/tadka/popu

2-3 tsp oil

1 tsp mustard seeds

1tsp urad dal

1/2 tsp jeera

1/2tsp dhaniya pwd

2 red chilli

salt as required

curry leaves

1/2 tsp ginger-garlic paste(optional)

coriander leaves to garnish

Method

Boil the aloo for 3 whistles adding some salt and keep aside…….also boil the beetroot adding some salt for 5-6 whistles(as beetroot ┬átakes more time to cook…..here we are not boiling the aloo and beetroot together)……once it is done cube both the aloo and beetroot and keep aside….

now in a vessel add oil and once it is hot add mustard seeds,urad dal,jeera,red chilli and fry for a minute……now,add boiled and cubed aloo and beetroot , mix well and cook for 5-8mts……check the salt and add more if it is needed ……add curry leaves,dhaniya pwd mix well and cook for 2mts and switch off the stove…..garnish with coriander leaves and serve hot with rice and ghee…..
