Mutton Kurma

Ingredients
1 kg mutton cubed,washed
4 cloves
2 elaichi
1″ cinnamon stick
1 bay leaf
2 large onions finely chopped
5-6 green chillies ,slit
11/2 tsp ginger garlic paste
1 large tomato,chopped
salt to taste
11/2 tsp oil
11/2 tsp ghee
3/4 tsp garam masala
chopped corianger leaves for garnish

For Marinade
2 tsp red chilli pwd
11/4 tsp coriander pwd
3/4 tsp cumin pwd
1/2 tsp turmeric pwd
11/2 cups thick curd
11/2 tsp poppy seeds,dry roast for 4 mts and soak in water for 10 mts and make a paste
4tsp grated fresh coconut
4 cashew nuts,soak in little water or milk and a make a paste
Add all the marinade ingredients to the mutton and keep aside for 1 hr
Procedure

  • Take a cooking vessel/pressure cooker and add oil,ghee and let it get heat.When the oil gets heated add cinnamon stick,elaichi,cloves,bay leaf and let then fry for 1 min.
  • Now,add green chillies,onions and fry them till the onions turn light brown(add little salt so that the onions cook fast).Now,add tomato and close the lid(the tomatoes must become like a paste).
  • Now,add ginger-garlic paste and fry for 2 to 3 mts.Now,add the marinated mutton and stir all the ingredients in the vessel and close the lid for 15 to 20 mts(once in a while keep stirring the ingredients in the vessel or else it will stick to the vessel).
  • Now,add garam masala and stir all the ingredients so that masala is equally spread.Now,add water and pressure cook it for 6 to 8 whistles so that the mutton is completely cooked.If the cury is still waterish you can cook the curry with open lid so that extra water evaporates.Once it is done add sufficient salt and switch off the stove.
  • Garnish with fresh coriander leaves.
